The 1st is sudden victory like you said. Any point will end the match (be it a takedown, penalty, or whatever).
The next two 30 second periods are not SV. Barring a pin, those two periods are wrestled in their entirety. Then, if it's still tied after those, then you repeat that process once more.
A 1 minute SV round, followed by two 30 second periods. If it's still tied after those, it comes down to riding time.
Whoever had more riding time throughout all those overtime periods, is the winner.
Note that it only counts riding time in overtime. The riding time from regulation time means nothing in OT.
